Fun in the kitchen – offer on kid’s aprons

BUTTERFLY FAIRY CAKES Image of girls making fairy butterfly cakes

Ingredients

4oz (115g) soft margarine or softened butter
4oz (115g) caster sugar
2 eggs
4oz (115g) self-raising flour
1tsp vanilla essence
1tsp baking powder

Icing

6oz (170g) softened butter
12oz (340g) icing sugar, sifted

Step 1

Pre-heat the oven to 200C/400F/Gas 6. Get about 18 paper cases ready.

Step 2

Measure all the ingredients into a large bowl and beat well for 2-3 minutes until the mixture is well blended. Half fill the paper cases with mixture.

Step 3

Bake for about 15-20 minutes until the cakes are well risen and golden brown. Allow to cool.

Step 4

For the icing beat the butter until it is soft, add the icing sugar and mix until smooth. Cut a slice from the top of each cake and cut this slice in half. Pipe a swirl of butter cream into the centre of each cake and place the half slices into the butter cream at an angle like butterfly or fairy wings.

If for some reason your cakes don’t rise sufficiently, don’t worry, just scoop out a circle from the cake and cut that in half, (then fill the cavity generously with delicious icing).

Step 5

Pop the kettle on, get your prettiest plates out and enjoy your delicious cakes…
